Covid-19 Recipe Series: Vegan Salted Caramel Rice Krispie Squares

Vegan Salted Caramel Rice Krispie Squares

Makes a 9 x 12 pan

1/2 cup vegan margarine
1/2 cup dark brown sugar
1/4 cup almond milk
1 tablespoon light corn syrup
1 1/2 teaspoons flaked sea salt
4 cups miniature marshmallows or 32 regular marshmallows
6 cups Rice Krispies cereal


Lightly grease a 9x12 pan with vegan margarine (separate from the 1/2 cup called for in the recipe). Place cereal in a large heatproof bowl. Melt margarine in a saucepan over medium-high heat. Stir brown sugar, almond milk, and corn syrup into margarine; cook, stirring, until mixture becomes thick and syrupy, about 7 minutes. Stir 1 teaspoon salt into margarine mixture. Remove from heat and add marshmallows; stir until marshmallows are smooth and melted. Pour marshmallow mixture over rice cereal and stir. Transfer cereal mixture to prepared pan and press down with a fork. If too sticky, put a bit of vegan margarine on fork or fingers and press down. Sprinkle with 1/2 teaspoon sea salt; cool and cut into squares.
